I could literally have one every day. So easy to make and you search for just the right mix of everything. Arugula is a must, spinach, red cabbage, hummus, carrot slivers, beans, oil, vinegar, croutons, bacon pieces…. freaking delish!! Maybe some capers, kalamata olives.
Regardless if you mess up the health factor with too much dressing, you’ll still feel like you made the healthy choice. Salads. A good thing.
